When we first tasted the coffees from Jhoan and Diego Vergara, we were amazed by their clarity and character. Visiting their farm gave us a deeper understanding of the careful and consistent work behind their approach.

Advanced approach to fermentation

At Las Flores, they experiment with fermentation to shape the flavour of their coffees. One of the tools they use is mosto, the juice left over from a previous coffee fermentation.

The fermentation is carried out in sealed tanks, allowing full control of the environment and helping the Vergara brothers guide and influence the profile of their coffees toward expressive and distinctive flavour profiles.
